2 tablespoons vegetable oil
340g (12oz) onion, chopped finely
55g (2oz) plain flour
1.15 litres (2 pts) water
55g (2oz) yeast extract
1-2 tablespoons tamari
Heat the oil in a saucepan. Add the onions and fry on a very low heat for about 20 minutes until golden. Add the flour and fry gently for 1 minute.
Gradually add the water and yeast extract, whisking constantly. Bring to the boil, stirring occasionally. Simmer until it starts to thicken, adding more water if required.
Add a few shakes of tamari, liquidize and reheat. Serves 8.
