2 tablespoons vegetable oil
55g (2oz) plain flour
1.15 litre (2 pts) soya milk
salt and pepper
Heat the oil slightly then mix in the flour. Cook over a low heat for a minute or two, stirring constantly.
Take off the heat and slowly add the milk,stirring all the time. Return to the heat and bring to the boil.
Simmer gently for about 5 minutes.
Add salt and pepper to taste. Serves 8.
Add 225g (8oz) of finely chopped mushrooms 5 minutes before the end of cooking.
Add 1 teaspoon mustard and 4 tablespoons Engevita yeast flakes at the end of cooking.
