JUNK VEGAN

Soya Milk Shake

1 glass soya milk
3tbsp vegan drinking chocolate powder
2-3tbsp vegan chocolate ice cream

  1. Pour milk into blender
  2. Add chocolate powder and ice-cream
  3. Mix thoroughly using blender, food processor or hand whisk

Chocolate Cake

Preparation 35 minutes
Cooking 50 minutes

chocolate cake mixture
340g/12oz self-raising flour
1tbsp baking powder
255g/9oz castor sugar
9tbsp oil
2tbsp lemon juice
115g/4oz cocoa powder
12floz water

chocolate cream icing
255g/8oz icing sugar, sieved
55g/2oz vegan margarine
cocoa powder to taste

filling
strawberry jam

  1. Line 2 x 8" cake tins with grease-proof paper.
  2. First make the cake, sieve flour and baking powder into bowl.
  3. Add castor sugar, oil, lemon juice, cocoa powder and water
  4. Mix well and put into cake tin and bake at 325F/170C/Gas 3 for 40 minutes. Check knife comes out clean
  5. Next make the chocolate cream icing, beat icing sugar, margarine and cocoa powder together
  6. Sandwich cake with layer of jam and layer of chocolate cream, trimming the cake if uneven
  7. Cover the cake with chocolate cream
