1 lb (450g) tomatoes, chopped
1 green chilli, deseeded and chopped small
1 clove garlic, crushed
Handful of coriander, chopped finely
Large pinch of salt
Large pinch of sugar
1/2 tsp cumin
1 tbsp lemon
1. Mix together and leave for at least one hour for the flavours to mingle.
Not all ready-ground spices are gluten-free as they may have been mixed with flour to stop the spices from clumping. If you are concerned contact the relevant company to confirm, or grind your own spices.
