Peanut Vegetables Filling
2 tbsp vegetable oil
1 small leek, roughly chopped
2 small carrots, roughly chopped
1 courgette, roughly chopped
1 red pepper, roughly chopped
1 clove garlic, crushed
1 heaped tsp plain flour
1 heaped tsp vegan bouillon
3 floz (90ml) water
1 tbsp peanut butter
Salt and pepper

Over a high heat stir-fry the leek, carrot, courgette and red pepper in
the vegetable oil until tender. Turn the heat down and add the garlic.
2. Mix together the flour, bouillon and a little of the water until a
paste is formed. Work in the remainder of the water and the peanut
butter. Add to the vegetables.
3. Turn up the heat. Stirring
constantly, allow the sauce to thicken. Simmer gently for a further
minute, season to taste and serve.
