Greek Salad
1 red onion, cut into rings
16 pitted black olives
1/2 cucumber, cubed
8 cherry tomatoes, halved
7 oz (200g) tin chick peas
1 tbsp olive oil or to taste
Juice of 1/2 lemon
Salt and pepper
1. Place onion, olives, cucumber, cherry tomatoes and chick peas into a bowl.
2. Drizzle olive oil and lemon into the bowl then add salt and pepper
to taste. Toss, cover and chill for an hour. Serves 4 as side salad
