With a little pre-planning, it is easy to prepare budget-friendly nutritional vegan meals at home, but things can be a little trickier when you are on the go. But being on the move doesn’t mean you have to sacrifice flavour, nutrition or your budget! With a few simple hacks, you can enjoy filling and affordable meals wherever you are. Here’s how… 

Pack travel-friendly foods 

Think easy on-the-go options that create minimal fuss and mess, such as hummus and crackers, wraps, fruit, mixed nuts or energy balls. Packing your own travel-friendly protein snacks not only saves money and avoids higher prices when out and about, but it also ensures healthier food options that help to keep your energy levels up, reduces reliance on often unhealthy fast food and ensures you have options on long journeys. 

Layering vegan meals 

Prepare delicious vegan recipes by focusing on building layers, such as grains, protein and vegetables, to make your meals more filling. Hearty meals will help you avoid expensive extras when on the go, keep your energy levels up and help you to avoid sugar crashes. You will feel full for much longer! Life gets busy and it’s not always possible to prepare food in advance, or perhaps you don’t have the space to carry meals. Where you can, identify local shops and cafes with affordable vegan options. Supermarket loyalty apps and student discount programmes can help you save a little more money. 

Get creative with leftovers 

Last night’s dinner could be a portable lunch, perhaps a pasta or rice bowl. You can also mix and match simple staples or seasonal ingredients you already have to make up a filling meal if you don’t have enough leftover food. For example, if you have a pasta dish left over, why not pair it with a salad if you also have leftover salad items? Or pair a rice bowl with some roasted veggies.

Buying multiple drinks on the go can soon add up, so carrying a reuseable water bottle and setting off with a flask of coffee or tea is a highly effective way to save money. This eliminates the need to pay high retail mark-ups and it also kinder to our planet!
