 Ingredients (makes 8–10 dosas)

  • 120 g (1 cup) jowar flour (sorghum flour)
  • 120 g (1 cup) ragi flour (finger millet flour)
  • 60 g (½ cup) gram flour (besan)
  • 2 tbsp semolina (rava/sooji)
  • 2 green chillies, finely chopped
  • 1 tsp ginger, finely chopped
  • 1 sprig curry leaves, chopped
  • 1 tsp cumin seeds
  • 1 tsp carom seeds (ajwain)
  • 1 tsp sesame seeds
  • Salt, to taste
  • 1 tbsp moringa powder (optional but highly recommended)
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • 2 tbsp fresh cilantro, chopped
  • Water, as needed (about 4–4½ cups or 1 litre)

Method

  1. In a large bowl, mix all the flours, sooji and spices.
  2. Add green chillies, ginger, curry leaves and cilantro.
  3. Gradually add water and whisk into a smooth, flowing batter. Let rest for 30 mins.
  4. Ensure the batter is smooth and free of lumps for a uniform dosa texture.Heat a greased pan. Pour about 1/4 cup of the batter in a circular motion from about 8 inches above the tava. You should immediately see a net shape form. If there’s large holes, you can pour a little extra batter there..
  5. Drizzle a few drops of oil and cook till golden and crisp on both sides.

Serve with:

Fresh coconut chutney, tomato chutney, or warm sambar for a complete meal!
