» Savoury miso oats by Sustainable Kitchen

If you’re bored of sweet oats or just fancy a savoury breakfast, then this dish is a great one to try. Inspired by Japanese cuisine, it uses miso paste and leek leaves to help add a rich flavour. This dish will keep you warm and full for hours!

Ingredients

  • 1 tsp margarine
  • ½ clove garlic
  • 1 tbsp diced leek leaves (the dark green part!)
  • 240ml oat milk – (if you don’t have scales, 240ml oat milk is 3 cm short of one full mug)
  • 2 tbsps miso paste
  • 100g oats – (if you don’t have scales, 100g oats is 3 cm short of one full mug) – use gluten-free oats if necessary

Allergens: soy, gluten (if not using gluten-free oats)

Method

  • Melt margarine in a pan, add garlic and fry gently until softened
  • Add the diced leek leaves to the pan and gently fry for 1-2 minutes
  • In a bowl or jug, mix the miso paste with the oat milk until combined.  Add to the pan with the garlic and leeks and stir through til heated
  • Add the oats to the pan, and stir through until they are covered by the oat milk.  Continue stirring until they thicken for approximately 2–3 minutes
  • Serve and enjoy!
