West African Peanut Stew

An indulgent peanut stew that’s inspired by the West African classic. Indulgent with creamy peanut butter, balanced perfectly with a little spice. This recipe is from The Vegan Punks.

  • 1 onion – chopped
  • 4 cloves garlic – diced
  • 1 tbsp fresh ginger – diced
  • 1 tbsp ground coriander
  • 0.5 tsp chilli flakes
  • 1 tin tomatoes (400g)
  • 750ml veg stock
  • 0.75 cup peanut butter – crunchy or smooth, your choice!
  • 500g sweet potato – peeled & chopped into 1” chunks
  • 1 tins chickpeas (400g) – drained & rinsed
  • 250g cabbage – sliced
  • 1/4 cup fresh coriander (~10g) – roughly chopped
  • Brown rice – ~28p

Instructions

  1. Pop a splash of oil to a large pan and bring to medium heat.
  2. Fry the onions until soft, then add the garlic, ginger, coriander powder & chilli for 1 minute.
  3. Pour in the tinned tomatoes and stock, bring to a simmer then stir in the peanut butter.
  4. Add the sweet potato, put a lid on and simmer for 10 minutes.
  5. Chuck the chickpeas in and keep simmering for another 5 minutes.
  6. Then add the cabbage and simmer for a final 5 minutes.
  7. Stir through the fresh coriander, season with salt and pepper to taste and serve with brown rice.

*All recipes have been developed with a target of no more than £1 per portion. Ingredients were primarily sourced from Aldi, with a couple of ingredients sourced from Sainsbury’s or Tesco where Aldi didn’t stock them. Prices were all valid as of June/July 2022. 

Ingredients were either bought in exact quantities required for the recipe, or in the smallest quantity available to ensure prices weren’t artificially low through bulk buying.
